German soup with cheese and leeks

Ingredients

  • 2 bunch leeks
  • 1 head onion
  • 1 lemon
  • 1 oil
  • 500 g minced meat
  • 200 ml cream
  • 200 g processed cheese
  • 700 ml vegetable broth
  • 1 salt
  • 1 pepper

Directions

  1. Halve leeks lengthwise, remove root base, cut into coarse pieces and wash. Halve and peel the onion. Wash the lemon with hot water, finely rub off about 1 tsp of peel, cut it in half and squeeze out the juice.
  2. Add onion and leek to a blender. Chop vegetables for 10 seconds. Add oil and minced meat to the pan and fry for 5 minutes. Add leeks, cream, processed cheese, lemon peel and vegetable broth and cook for 15 minutes
  3. Season the soup with salt, pepper and lemon juice and serve on plates.
