German soup with cheese and leeks

Ingredients
- 2 bunch leeks
- 1 head onion
- 1 lemon
- 1 oil
- 500 g minced meat
- 200 ml cream
- 200 g processed cheese
- 700 ml vegetable broth
- 1 salt
- 1 pepper

Directions
- Halve leeks lengthwise, remove root base, cut into coarse pieces and wash. Halve and peel the onion. Wash the lemon with hot water, finely rub off about 1 tsp of peel, cut it in half and squeeze out the juice.
- Add onion and leek to a blender. Chop vegetables for 10 seconds. Add oil and minced meat to the pan and fry for 5 minutes. Add leeks, cream, processed cheese, lemon peel and vegetable broth and cook for 15 minutes
- Season the soup with salt, pepper and lemon juice and serve on plates.
