Potato stew

Ingredients

  • 50 ml olive oil
  • 2 onions
  • 2 sweet peppers
  • NaN cloves garlic
  • 1 tbsp Spanish Spice Mix
  • 2 tomatoes
  • 1 kg potatoes
  • 2 tbsp wine vinegar
  • 1 liter water
  • 1 salt

Directions

  1. Heat olive oil in a thick-bottomed saucepan at medium temperature. Add onions, cut into crescents and sweet peppers cut into strips and cook for about 15 minutes.
  2. Add chopped garlic and cook for another ~{2-3%minutes}.
  3. Add Spanish Spice Mix and diced or grated tomatoes. Mix well.
  4. Cut potatoes into large cubes and add them to the pan.
  5. Pour wine vinegar and water (or broth for a more intense taste)
  6. Add salt to taste.
  7. Bring to the boil and cook for about 25 minutes or until the potatoes are fully cooked.
