Potato stew

Ingredients
- 50 ml olive oil
- 2 onions
- 2 sweet peppers
- NaN cloves garlic
- 1 tbsp Spanish Spice Mix
- 2 tomatoes
- 1 kg potatoes
- 2 tbsp wine vinegar
- 1 liter water
- 1 salt

Directions
- Heat olive oil in a thick-bottomed saucepan at medium temperature. Add onions, cut into crescents and sweet peppers cut into strips and cook for about 15 minutes.
- Add chopped garlic and cook for another ~{2-3%minutes}.
- Add Spanish Spice Mix and diced or grated tomatoes. Mix well.
- Cut potatoes into large cubes and add them to the pan.
- Pour wine vinegar and water (or broth for a more intense taste)
- Add salt to taste.
- Bring to the boil and cook for about 25 minutes or until the potatoes are fully cooked.
